Dark Chocolate Avocado Truffles prove to be a healthful option for those keeping January resolutions. They’re rich and creamy, and a guilt-free way to satisfy your sweet tooth!
1 1/2cups274 grams dark or semisweet chocolate chips, melted
1teaspoonvanilla extract
2tablespoonsmatcha green tea powder
2tablespoonspowdered sugar
Instructions
Mash avocados until lumps are virtually gone. You can beat these in a standing mixer with a whisk attachment or in a large bowl with a hand mixer for smoothest results. Add melted chocolate and vanilla extract to the mashed avocado and mix until all ingredients are well combined. Refrigerate for at least 40 minutes or until the mixture is firm.
Combine matcha powder and powdered sugar in a bowl until well mixed. Pour the mixture in a shallow dish. Scoop out rounded teaspoons of the chilled mixture and roll between your palms until mixture forms a ball. (Truffles should be the size of a small walnut).Note: Rinse your hands in cold water to keep chocolate mixture from sticking to them, and to keep the temperature of the truffle balls cool as you work with them.
Roll truffles in matcha-powdered sugar mixture and place on a plate or wax paper covered baking sheet; refrigerate for 10 minutes to set. Reserve the extra matcha mixture to re-roll truffles, if needed. Keep chilled until ready to serve.
