Classic Apple Cobbler

We’re enjoying cooler weather here in the southeast, so I’m eager to take the pugs outside and let them play in the crisp air – but first! First I’d like to share this Classic Apple Cobbler, which is so season appropriate and easy to make, it could be a good recipe to cozy up to this weekend. It’s great at any time of year but I crave its warm spices in cooler months. It’s so well-loved there’s never a scrap left behind!

Classic Apple Cobbler

First you’ll peel and core about 6 apples. Pile them all high in a large saucepan and sprinkle them with sugar and spices.

The apples are dotted with butter and cooked for a few minutes on the stove-top. Butter is the magic ingredient in this recipe. Embrace the butter! It only takes about 5 minutes for the butter to melt and turn the sugar and spices into a gorgeous golden syrup that coats the apples. Honestly, I could stop right here and dig in, but the apples will still be a little crisp, so into a 2 quart dish they go!

The crust is so simple. You stir all the ingredients together in a bowl and then dollop the batter on top. Spread it over the apples – the batter will be thick, so just do the best you can. The back of a spoon works fine for this.

Top the crust with coarse sugar and you’ll be rewarded with a crunchy crust that perfectly compliments the soft apples.

I recommend serving the cobbler with whipped cream or ice cream. You can’t go wrong with vanilla bean ice cream, but I keep coffee ice cream on hand and it’s good for something different (and if you’re a coffee-lover like me!).

Ingredients
  

For the Filling:

  • 6 large firm apples peeled, cored and sliced
  • 1 tablespoon lemon juice
  • 3/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon apple pie spice*
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup water
  • 4 tablespoons butter

For the Topping:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons butter melted
  • 1 egg
  • 1/4 cup buttermilk or whole milk
  • 1/4 cup coarse sugar

Instructions
 

  • Preheat oven to 375°F. Butter a 2-quart baking dish; set aside.
  • Combine apple slices and lemon juice in large bowl; toss until apples are coated with juice. Add apples to large saucepan and add remaining filling ingredients. Cook over medium-high heat, stirring frequently until mixture comes together and creates a syrup that coats the apples (about 5-7 minutes). Pour apple mixture into prepared dish.
  • Combine flour, sugar, baking powder and salt in large bowl; whisk together until incorporated. Add butter, egg and milk; stir well. Drop spoonfuls of batter on top of apple mixture and spread it slightly using the back of a spoon. Generously sprinkle with coarse sugar. Bake 35-40 minutes or until apples are tender and crust is golden brown. Serve warm with a scoop of ice cream.

Notes

*If you don’t have apple pie spice, you can use 1 teaspoon each cinnamon, nutmeg and ground ginger.

What type of apple do you prefer for this recipe? It looks wonderful and I think I'll be making this for dessert for Sunday supper.

To me, nothing says Autumn like Apple Cobbler, but THIS is the easiest recipe ever! No true crust to fuss with, yet all the rewards of the taste of crispy, sugary crust! Planning to make this weekend and probably every weekend til the Christmas goodies begin!

I have made this twice, and I find that the apples have to be cooked down a bit more in the saucepan..otherwise the cobbler ends up too watery! It is easy and delicious!
