Salty Peanut Bars

Hello to you on this last day of July! Can you believe it? Tomorrow we welcome a whole new month. August is the month that I do lots of planning for baking season, so I’ll be having major cookbook/notebook sprawl across my office floor. But who am I kidding? That’s pretty much the state of my office year round.

Let’s talk about these Salty Peanut Bars. Now. You know I’m a salty-sweet girl, so these didn’t last long at all at my house. They are something akin to a Payday candy bar, but with a fudge textured center and brown sugar crust.

They’re pretty simple to make, too! Most of the ingredients are pantry staples you’ll have on hand. I keep peanut butter chips stocked in my pantry (sometimes for snacking!), but I don’t always keep mini marshmallows on hand. You’ll need two cups of those for the filling.

My favorite part of this recipe is the roasted, salted peanuts. Some get folded into the filling and, as you can see, a generous helping gets sprinkled on top.

I could see these being star sellers at bake sales this fall. I think next time I make these I’ll cut them into rectangles instead of squares, and then wrap them individually for homemade candy bar gifts. However you slice them, they are delicious! These look so delicious! I am also a salty sweet girl (and loving your Sea Salt Sweet cookbook by the way!) I am definitely going to have a go at making these peanut bars – thank you for the recipe Heather!

A quick question – we don't get peanut butter chips here in Oz. Could I use white chips and add some peanut butter? Thanks 🙂

Hi! Yes, I believe you can with 1 1/2 cups (about 260 g) white chocolate and 1/2 cup (about 5 oz.) creamy peanut butter. Melt the two together over low heat and stir to combine. I haven't tried it with this recipe, but I've made peanut butter fudge before with white chocolate, so in theory it should work perfectly!
