Rocky Road Brownie Mix

Well, here it is friends. My last advent post; the bookend to my first advent post. If you need that last, last, last minute gift, then this little jar mix may save your bacon.

If you’re a seasoned baker, then you’ll likely have all the ingredients in your pantry (or be able to substitute walnuts for hazelnuts), but if you’re not – don’t fret. Most grocery stores are still open on Christmas Eve, and will likely have everything you need for this gift right down to the quart jar. Just check the canning supplies aisle.

Heavens, are these brownies ever fudgy! I can’t get over how chewy and moist they are. The mini marshmallows make the inside super gooey, and the mallows exposed on top toast in the oven and create a crisp crust.

There are so many sweets and cookie platters that surround the holiday season, and that’s why I love giving baking mixes. They last a long time on the pantry shelf, and after the Christmas cookie platters and fudge tins are gone, there will be scratch-made brownies within reach.

Ingredients
 
 

  • 1 1/4 cups granulated sugar
  • 2/3 cup unsweet cocoa powder
  • 3 ounces semisweet chocolate chips
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/3 cup chopped hazelnuts
  • 1/2 cup mini marshmallows

Instructions
 

  • In a one quart jar layer sugar, cocoa powder, and chips. Whisk together flour, baking soda and salt in a small bowl. Spoon the flour mixture over the chips in the jar. Top with hazelnuts and marshmallows; fasten lid. Include instructions for making brownies with the gift.
  • Instructions: Preheat oven to 325°F. Grease an 8x8x2-inch pan, or line it with foil that overhangs the edges of the pan; grease foil. Place the brownie mix in a large bowl. Add 3 eggs and 11 tablespoons melted butter; mix well. Pour in prepared pan. Bake for 38-45 minutes. Brownies are done when a toothpick inserted near the center comes out with a few moist crumbs attached. Cool brownies in the pan on a wire rack. Cut into bars.

Notes

Brownie mix is shelf stable for up to one month.

Hi Hana! Nuts lose their freshness quickly. Even sealed in a closed jar at room temperature they will go rancid after one month's time. You could store the jars in the refrigerator and the nuts would stay fresh for up to six months.
