These are a favorite that I\u0026#39;ve made countless times. They\u0026#39;re easy, and if you\u0026#39;ve never made them then you should probably drop everything and go make them \u003Ci\u003Eright now\u003C\/i\u003E. Seriously, they are my favorite mini breakfast muffin. \u003C\/li\u003E\u003Cli\u003EHomemade life-changing English muffins (with the option of butter and jam). I\u0026#39;m still pinching myself. \u003Ci\u003EI made English muffins that look and taste like English muffins!\u003C\/i\u003E It can be done! More details on this later.\u003C\/li\u003E\u003Cli\u003EJuicy red cherries. It\u0026#39;s good to offer a fresh bite with breakfast. It makes everything seem more vibrant and special.\u003C\/li\u003E\u003Cli\u003EO.J. - good ol\u0026#39; sunshine in a glass. They keep really well (although they never last more than two days), so they tasted just as fresh as the first day. I know many of you have made these before, but for those who haven\u0026#39;t, you should know that these muffins get dipped in butter (major!) and then rolled in cinnamon-sugar. There were two recipes I considered making before settling on this one. The first is made with a pourable batter that requires the purchase of English muffin rings, but since not everyone has those, I opted for the roll-and-cut version. I still used my pastry rings to fry them in, but I soon discovered that they are not needed. My first muffins were a little too thick, and didn\u0026#39;t have that wonderful bubbly, craggy interior, so I patted the dough thinner, cut new rounds and fried a second batch - they were perfect! They have just the right amount of chewiness, and a perfectly pocked interior. Most loaves turned out perfect, but the eggs in two loaves speckled a little during baking, so we ate those imperfect ones first. usually the \u003Ci\u003EAsiago Cheese\u003C\/i\u003E and \u003Ci\u003EThree Seed Sour Dough\u003C\/i\u003E.  One variety that I had not tried before was \u003Ci\u003E\u003Cstrike\u003ECountry\u003C\/strike\u003E \u003Cstrike\u003EWhite\u003C\/strike\u003E French Miche \u003C\/i\u003E(a Panera employee kindly corrected me).   I knew if it was comparable to the quality of the other breads they bake, it would be fantastic.  And it is!  Even a small slice seems enormous, which makes it perfect for hearty sandwiches. In my search for Easter fare, I found (yet another) Eastern European bread recipe that I fell in love with. I was so excited to bring it to our table, and to the people I love most.   And heck, I was proud of myself. I would make it my life's pursuit,  if I had to make 20 loaves or 200, I would do it!  As luck would have it, my next effort was genuinely acceptable.
