3 Ingredient Peanut Butter Marshmallow Candy

Say hello to my new favorite candy. I can’t believe it took me so long to try it – and talk about easy! I’m not even sure it qualifies as a recipe. Peanut butter and chocolate are melted together, and then mini marshmallows are folded in to the mix. It’s a little like rocky road, but softer and without the rocky part (no nuts!). It’s smooth and creamy and the marshmallows give it a bouncy quality that makes it totally addictive.

If you need a last minute treat, this is the ticket. I make this candy in the microwave, which only takes about 2 minutes of cooking, but you can also make it on the stove top over medium-low heat. It sets up rather quickly in the refrigerator, too.

Next time I’m at the grocery store, I plan to pick up a few packages of multicolor mini marshmallows. Imagine how pretty those would be in this candy! I’ve also seen mini peppermint marshmallows, which would be delicious and so season appropriate.

Ingredients
 
 

  • 1 12 ounce package semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 4 cups mini marshmallows

Instructions
 

  • Combine the chocolate and peanut butter together in a large microwave safe bowl. Heat at 30 second intervals at 100% power, stirring well between heating, until the mixture is smooth and combined. Be careful not to overheat. You may also heat the chocolate and peanut butter in a saucepan over medium-low heat, stirring constantly until smooth.
  • Fold in marshmallows using a large rubber spatula.
  • Pour into greased 8-inch square pan.
  • Chill until firm, about 1 hour.
  • Cut into squares.
  • Store in an air-tight container at room temperature. Package in cellophane bags for gift-giving or add them to giveaway cookie platters and candy trays.

Could you use almond butter instead of peanut butter for a more traditional Rocky Road flavor?

I make these more rocky with the addition of peanuts and also add butter, vanilla and a good hit of salt …. and when I make them I have to send them all away quickly because I can't stop cutting off just one.more.piece. I'm loving your daily treat offerings. Awesome stuff and thank you!

My mom made these every year around Chrismtas with her annual holiday baking growing up. Her recipe calls for the little mini Fruit Marshmallows though but they were always one of my favourites.

How do you prevent the marshmallows from melting into the chocolate? Do you have to let a cool a bit before stirring them in?

The chocolate should not be steaming hot if you stir well between heating. Commercially prepared mini mallows seem to hold up well in the chocolate. A good test would be to test the chocolate with a fingertip. If it's screaming hot (it shouldn't be) then let it cool a minute. The mallows will be fine in warm chocolate.

This recipe came from a cookbook that came with the first microwave my parents ever bought. It originally called for lining the bottom of the dish with peanuts and marshmallows and pouring the melted chocolate and peanut butter over those. I eventually started just using chunky peanut butter and skipping the peanuts. It's so quick and everyone loves it. It's just really important to wrap it tightly because the marshmallows dry out quickly. I've never done it without the nuts, but it does sound smooth and creamy…I may have to try that sometime!

Perfection! Have made many, many times and for several years. Always a crowd pleaser. I make a double recipe and chill. Cut into small squares and store covered. Fabulous!
