Though it may seem otherwise, this cheesecake isn't overly sweet, and I really love how the strawberry flavor is heightened by the tanginess of the cream cheese. I can't help but think it would be a good pick-me-up for someone feeling blue. It's almost impossible to be unhappy around all those sprinkles!
No Bake Strawberry Milk Cheesecake
Yield: one 9-inch cheesecake. [click for printable version]
Note: I used the 25% less sugar variety of Nestle's Strawberry Milk Drink Mix. If using the full sugar mix, the granulated sugar in the cheesecake filling may be omitted. I suggest adding the sugar to taste after the strawberry powder has been mixed into the filling.
Graham Cracker Sprinkle Crust:
2 cups fine graham cracker crumbs
1/2 cup jimmies sprinkles (can be found in the ice cream toppings aisle )
1/2 tsp salt
2 tbsp granulated sugar
8 tbsp unsalted butter, melted and slightly cooled

- Combine graham cracker crumbs, jimmies, salt and sugar in a large bowl. Whisk until thoroughly combined and jimmies are evenly dispersed.
- Make a divot in the middle of the graham cracker mixture and pour in the melted butter. Mix together using a rubber spatula; turn mixture over from the bottom of the bowl to the top until all the crumbs are moistened.
- Pour crumbs into an 8 or 9-inch springform pan; press tightly and evenly into the bottom and up the sides of the springform pan. Set aside.
Strawberry Milk Cheesecake Filling
2 ¼ cups heavy cream
1 pound (two 8 oz. packages) cream cheese, softened
1 cup strawberry milk drink mix (such as Nestle's)
2 tbsp. granulated sugar * (see note at beginning of recipe)
- In a large bowl, beat heavy cream with an electric mixer until soft peaks form.
- Add softened cream cheese and beat again with the electric mixer until combined. Sift strawberry milk powder over the whipped cream/cream cheese mixture. Add granulated sugar if using* (see note at beginning of recipe) and mix again until well incorporated.
- Pour mixture into the prepared graham cracker crust. Set aside.
Topping:
1 cup heavy whipping cream
1/4 cup granulated sugar
Multicolor nonpareils
- In a medium bowl, beat heavy cream with an electric hand mixer until soft peaks form. Gradually add sugar and beat until stiff peaks form. Transfer mixture to a piping bag fitted with a large star decorator tip. Pipe whipped cream stars around the outside edge of the cheesecake, and in the center. Sprinkle with multicolor nonpareils.
- Cover springform pan in plastic wrap and place in the freezer for 4-6 hours, or overnight. To unmold, remove from freezer and place a dishcloth soaked with hot water and wrung dry around the outside of the pan. This will warmth will help loosen the frozen crust from the pan. Let cheesecake partially thaw in the refrigerator before serving. Slice cheesecake while still partially frozen and serve.

So, you're supposed to eat this partially frozen?? Is that what I'm reading? (Not that I'm entirely against that idea, mind you... just looking for clarification. I LOVE the sprinkles in the crust, at first glance I thought you used the momofuku sprinkle crumblies as the crust from that "birthday cake" they do - but that would be a bit too crunchy as a crust to my liking - graham cracker crust is the most PERFECT crust in my mind, so why not add sprinkles!

Could you use fat free half and half instead of heavy cream? Probably a stupid question but I really try not to use heavy cream in my household but this looks delicious!
Half and half won't whip like heavy cream. You could try adding a container of lite cool whip, though I haven't tried that. In theory it should work! :)

My girls would love this! You are one of the few bakers that could make this cake with its pink filling and sprinkles galore look elegant.
does the strawberry milk powder fully dissolve in the cheesecake? Or do you get that texture? The only reason I'm asking is that a few years ago my hubby decided to try using chocolate milk powder to color/flavor frosting and it was very odd, had a pinkish/brown color & a grainy texture. Otherwise this looks really good.
It's not grainy. Sifting definitely helps the mixture dissolve, so that step should not be skipped!

This cake was the answer to my prayers! Tried this, it's in the freezer but I bet it tastes as good as it looks. I had extra strawberry milk cheesecake filling so I cut the bottoms off fresh strawberries (so they'd sit flat), cut the tops into a tulip shape and piped the cheesecake filling into the strawberries,then sprinkled with graham crumbs. Put a pic on my Pinterestboard "Baking 4 the kids", and in 25 minutes it was repinned 31 times! Thanks for TWO desserts!

I'm in Israel an only have strawberry milk, no powder.

I used the 25% less sugar variety of Nestle's Strawberry Milk Drink Mix - which is powdered. I have not used the syrup or bottled strawberry milk, but I think the mixture would be too lax if either of those were utilized instead of the powder. I fear it would not set properly.
If you are going to sell this, how much would it be? Pls give me an idea. I might try this at home and sell it to my relatives. Hehe. I have to say that this is the most adorable cheesecake ever.

Thanks for the great recipe! I'm going to have to stick around and read some more of your posts. I wanted to let you know about a couple things I tried and what I might do differently next time.
1. I made a Golden Oreo crust instead of graham cracker (eliminating the sugar, since the oreos are sweeter than graham), just because I'm not a fan of graham. Everyone thought it was a good fit.
2. I would beat the cream cheese/strawberry milk mix separately from the whipping cream and then fold them together. My cake had some lumps of cream cheese because I was really worried if I kept beating them all together it was going to become a solid mass (I once over-beat some icing I was making; it was a disaster). No one complained, probably didn't even notice, but my baker's pride was a little hurt by having lumps.
3. My strawberry milk mix said "25% less sugar" and then in really tiny print "than the leading brand". Maybe yours said that too?
4. I didn't actually freeze mine after the final whipped cream/sprinkles. Is that what caused the sprinkles to bleed? It wasn't really a problem, just curious if yours did too.
5. How do you get the cake off the springform base? I just left it attached and put it on my cake stand, because I was worried I'd mangle the whole thing before I could proudly walk it around to my guests :)
