Chocolate Sugar Cookies

Today I'm sharing my favorite chocolate sugar cookie recipe that is ideal for decorating.  It contains no chemical leavening so it bakes up evenly for a perfectly smooth decorating surface. I use this recipe for decorating Christmas cookies, but they're also good sandwiched with a little buttercream.

A biscuit cookie (or biscuit biscuit?)!

Chocolate Sugar Cookies
Yield: Approximately two dozen                                                                          [click for printable version]

1/2 lb. (two US sticks) unsalted butter
1 cup plus 2 tablespoons granulated sugar
1 egg
1 tsp. vanilla extract
2 cups plus 1 tablespoon all purpose flour
1 scant cup dark cocoa powder
Pinch of salt

  1. In a stand mixer fitted with the paddle attachment, mix the butter and sugar together until just incorporated. Do not over-mix at this stage, or the cookies may spread while baking.
  2. Add the egg and vanilla extract. Mix again on low speed, stopping to scrape down the sides of the bowl intermittently as needed.
  3. In a medium bowl, whisk together the flour, cocoa powder and salt.  Add to the butter and egg mixture.  Mix on low speed until a dough is formed and there are no longer any streaks of butter in the mixing bowl. The dough will often clump around the paddle attachment while being mixed. This is normal and a good sign that your dough is the right consistency.
  4. Line a baking sheet with parchment paper.
  5. Turn the dough out onto a sheet of wax paper and top with a second sheet.  Roll dough into an oblong disc between the paper with a rolling pin.  Transfer dough - wax paper and all - to a large cookie sheet.  Wrap the dough tightly onto the cookie sheet with plastic wrap and refrigerate for 1 hour.
  6. Remove top sheet of wax paper and roll dough a little thinner.  It should not be sticky.  You may dust the surface lightly with flour if it is sticky, but not too much!  You don’t want streaks of white flour baked onto your pretty dark chocolate cookies.
  7. Roll dough to a ¼-inch to ½ -inch thickness.
  8. Cut out desired shapes from the dough and transfer to the prepared baking sheet. Be careful not to stretch the cutout shapes or they will be distorted after baking.
  9. Refrigerate the cutouts for 30 minutes. This will help the cookies maintain a crisp shape during baking.
  10. Preheat the oven to 350°F.
  11. Bake the cookies for 15 to 20 minutes.
  12. Let cool on the baking sheet for 5 minutes. Transfer to a wire rack. Decorate the cookies when completely cooled.

Lots of friends buy me the cutest aprons when they find out I'm obsessed with baking, so I'd return the favor and buy one of modcloths' aprons for my new-to-baking friends, and then also buy the deco dot apron for myself! Those ruffles are adorable :) and you have to look cute and have fun in the kitchen to have a baking success!

For Christmas I am creating a cupcake baking set for my little sister who just got married in June. She's always loved baking but recently gotten into cupcakes and she loves it. So I'm creating an all things cupcake basket for her. Shh don't tell her!! She's also collected teacups for many years now. She likes to have friends over for little cupcake parties, and while I already have a lot of cupcake-related things, she doesn't have any cutesy little teacups to use when she has people over. The Floral to Ceiling Tea Set would be just perfect to go with everything! If I won I would definitely get that for my sister and a few things for my mom for Christmas too! Thanks so much for the opportunity to enter!!

My sister is majorly into baking and is working on building up her own supply of cooking utensils, I would love to get her the "Roy G. B-aker food prep set". I would also love to buy that set for another sister of mine who will be getting married in the spring. Personally I'd love one of the "Paw me a cup" tea sets for myself, they are adorable!

The stack-able bowls/measuring devices would be amazing for me. Though a nice, new timer or reliable oven mitt (as opposed to random kitchen towels) or an Anim-all taken care or mug would all get love in my home.

Everything is so cute! I am loving all the aprons, but on the practical side I would probably like the stacking food prep set- and still really cute!

Wow, what a fabulous place ModCloth Table top and Kitchen category is! I really like the Never Parched in Paris water bottle, and the Bowled and Beautiful mixing bowls. The names of the items are fun and amusing by themselves!

I'd definitely get the cake pops kit. Plus any number of cookie cutters I could, because I love making cookies and sharing them with friends. Wonder With a Whisker Cookie Cutter Set and Whisker Until Smooth Baking Mold would be at the top of my list also

I think I would probably snag an apron or 2, a friend of mine is always mooning over cute aprons, but never gets one for herself, so I think I would get one for her for christmas.

I tried your poached pair wrapped in pastry puff recipe the other week and it turned out so perfect

I absolutely love baking, and I would love to get the Roy G. B-aker Food Prep Set because I've been mixing my batter in chip bowls, and I would love to have a sturdy mixing bowl. I also adore the Cat Crazy Bottle Set so I will be able to make my own buttermilk and half and half.

Thank you for blogging~! Your recipes always inspire me to bake more! :]

I love this site!! So nice! It is a present in itself : ) There are several things I want for myself, but to buy all this for others is even nicer : ) And I know the contest is only for U.S. residents but Modcloth does also chips international orders : D so I give it a try. The moustache cookie shapers and the mustache-shaped mold would be such cool gifts because it is Movember and even girls look great with a moustache ; ).

I own an apron already but I never wear it even though I make a mess all the time. Maybe if it were cute like that one I would wear it!

Oh boy, if I was going for practical those birds of a feather measuring spoons would fit right in (I've somehow lost both 1/4 and 1/3 cups I own) or the duo tiffin box but for sheer joy and pleasure those mug in owl and mug in fox would be perfect for both me AND presents!
