Chocolate Sugar Cookies


Today I'm sharing my favorite chocolate sugar cookie recipe that is ideal for decorating.  It contains no chemical leavening so it bakes up evenly for a perfectly smooth decorating surface. I use this recipe for decorating Christmas cookies, but they're also good sandwiched with a little buttercream.





A biscuit cookie (or biscuit biscuit?)!


Chocolate Sugar Cookies
Yield: Approximately two dozen                                                                          [click for printable version]

1/2 lb. (two US sticks) unsalted butter
1 cup plus 2 tablespoons granulated sugar
1 egg
1 tsp. vanilla extract
2 cups plus 1 tablespoon all purpose flour
1 scant cup dark cocoa powder
Pinch of salt

  1. In a stand mixer fitted with the paddle attachment, mix the butter and sugar together until just incorporated. Do not over-mix at this stage, or the cookies may spread while baking.
  2. Add the egg and vanilla extract. Mix again on low speed, stopping to scrape down the sides of the bowl intermittently as needed.
  3. In a medium bowl, whisk together the flour, cocoa powder and salt.  Add to the butter and egg mixture.  Mix on low speed until a dough is formed and there are no longer any streaks of butter in the mixing bowl. The dough will often clump around the paddle attachment while being mixed. This is normal and a good sign that your dough is the right consistency.
  4. Line a baking sheet with parchment paper.
  5. Turn the dough out onto a sheet of wax paper and top with a second sheet.  Roll dough into an oblong disc between the paper with a rolling pin.  Transfer dough - wax paper and all - to a large cookie sheet.  Wrap the dough tightly onto the cookie sheet with plastic wrap and refrigerate for 1 hour.
  6. Remove top sheet of wax paper and roll dough a little thinner.  It should not be sticky.  You may dust the surface lightly with flour if it is sticky, but not too much!  You don’t want streaks of white flour baked onto your pretty dark chocolate cookies.
  7. Roll dough to a ¼-inch to ½ -inch thickness.
  8. Cut out desired shapes from the dough and transfer to the prepared baking sheet. Be careful not to stretch the cutout shapes or they will be distorted after baking.
  9. Refrigerate the cutouts for 30 minutes. This will help the cookies maintain a crisp shape during baking.
  10. Preheat the oven to 350°F.
  11. Bake the cookies for 15 to 20 minutes.
  12. Let cool on the baking sheet for 5 minutes. Transfer to a wire rack. Decorate the cookies when completely cooled.

    I make cakes/cupcakes/treats for friends and family, and anyone who asks, really LOL! I need a few things in my kitchen to make things a little easier, SPACE being the main thing! I alreasy have, and love, thislittle owl for holding kosher salt, and I'd like to give one to a friend who always gushes when he appears in my recipes (she doesn't care about the recipes, just Mr. Salt Owl.)For myself, I'd pick the owly apron or owly mug (can you tell we love owls 'round here?)Modcloth is just so adorable, it's hard to pick sometimes!

  139. Omg! Everything on ModCloth is so cute! I didn't find anything my friends or family would like, but I did find some awesome stuff for me! :D I especially like the Owls of a Flavor Measuring cups, the Beau-tea-ful Surprise Mug in Owl and in Fox.

    By the way, your chocolate sugar cookies look so beautiful! I wish I had artistic talent like that...or at least half as much hand-eye- coordination.

    My daughter loves them. She loves everything shark from beachtowels to silly masks to fish tank accents. If it's a shark, she wants it. So I was thrilled to see the shark items listed on the ModCloth site! She would totally love the "Sip At Your Own Risk" tumbler and I could see her only using this cup every night. The bottle opener is fun, but for my not-so-little chef in training, The "Jaws of Cooking" oven mitt would be a must have!!

    Personally, I would love the whale-shaped measuring cups, the Matroyshka measuring cups, or the Roy G. B-aker set... I do actually have a measuring cup, but only the one that's adjustable, and it only goes up to half a cup. I have to count out loud by the half-cup when I cook anything, haha.

The woodland holiday apron is adorable and I would love to give it away to my roommate who is a delightful little baker!
