Call me easily amused, but these little torch-topped cupcakes delight me. Besides being a cute novelty item for a party, I think they would add a little drama to the end of a romantic meal. I've been looking for something different to serve for Valentine's dessert, and this is definitely different. The strawberries are hollowed out and filled with a bit of liquor, then ignited with a match.
For the cake portion, I chose a One Bowl Chocolate Cupcake recipe because 1. it's quick 2. it is easy, and 3. it fits my prerequisite for a light ending on date night.
I should say, a light ending provided you don't eat too many. Which is really, really easy to do.
The cakes are just sweet enough, and have a light, fluffy crumb - the perfect vehicle for rich chocolate buttercream.

Notes for flaming strawberries:
- Any alcohol below 80 proof will not ignite well. I used 80 proof which makes a small blue flame. Note: some have had trouble getting 80 proof to ignite - lots of people are recommending Bacardi 151 as a fail-safe.
- You can add a little sugar to the inside of the strawberry to sweeten things up. However, the flame seems to last longer without the addition of sugar.
- Make sure to use a liquor that you like. Vodka is a good choice if you want very little flavor.
- Alcohol evaporates, so light the strawberry soon after you spoon the liquor in.
- Room temperature alcohol ignites better than refrigerated.
- Do I have to say it? Probably not, but my conscience will not let me go without. Do not attempt to eat a flaming strawberry. It has a relatively short burn time, lasting about 30 seconds to 1 minute. So, enjoy but be careful. Use your noodle.

Chocolate Cupcakes with Flaming Strawberries
Yield: About 20 cupcakes

Cupcakes:
3/4 cup unsweetened cocoa powder
1 1/2 cups all purpose flour
1 1/2 cups sugar
1 1/2 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
2 eggs
3/4 cup hot water
3/4 cup heavy cream
3 tbsp canola or other vegetable oil
2 tsp vanilla extract
Preheat oven to 350 degrees.
Line muffin tin with cupcake papers and set aside.
Sift together cocoa, flour, sugar, baking soda, baking powder and salt into a large bowl. Add eggs, water, heavy cream, oil and vanilla. Mix with a hand held mixer until smooth.
Divide batter among muffin cups, filling each half full. Bake for 20 minutes. Let cool before frosting.
Frosting:
2 sticks softened butter
4 cups confectioners' sugar
4 tbsp unsweetened cocoa powder, sifted
In the bowl of a stand mixer fitted with whisk attachment, cream together sugar, cocoa and butter; beginning on low speed then increase to high. Beat until fluffy and lightened in color. Transfer mixture to a piping bag fitted with a decorative tip. Frost cupcakes.

Strawberries:
18-24 Strawberries - you'll need as many as you have cupcakes
Vodka, rum, or your choice of liquor 80 proof or higher (use Bacardi 151 for fail-proof results).
Hollow the strawberries carefully. If you pierce the side of the strawberry accidentally, start with a new one. Since you'll be setting the liquor aflame, it is important that the strawberry is leak-proof.
Set one strawberry atop each frosted cupcake. Fill strawberries with liquor just before lighting (see tips). If you need to light them all at once, (say, for a party) use a turkey baster to quickly fill all the strawberries and a grill lighter in lieu of matches.

ReplyDeleteJane, I used disposable mini brioche pans from the King Arthur Flour store. They are cute but were a bit of a pain when it came to removing the cupcakes.
Brooke, Thank you! I must admit that I am a little dissatisfied with the graininess that some of the photos have. I used a 50mm 1.8 lens which is great to have in low light situations. It's pretty cheap too as far as camera lenses go.

Seems a few people are having trouble getting the strawberries to light. Here are a few more tips:
Fill the strawberry with alcohol almost to the top. If there's too little alcohol inside, the moisture from the strawberry will extinguish the flame.
You may also pat the inside of the strawberry with a paper towel to make sure it is dry.
Try using a grill lighter. It's easier to hold the flame onto the liquor.
The flame can be seen best in low-light situations. If in a bright setting, you may not see the effect.
I used 80 proof vodka, as well as Jack Janiel's TN Whiskey 80 proof. Both presented a blue flame.
Get a fresh bottle of liquor. Those mini liquor bottles sold at liquor store are perfect and inexpensive. Plus, you'll know you have a fresh product.

ReplyDeleteMade these this weekend came out great, except had a little trouble with the frosting.... nothing a little cream cheese didnt fix. I used 100 proof expresso vodka, still burned with a blue flame. I dried out the strawberries with a paper towel and we had to dim the lights to see the flame, but all and all very beautiful and tasty! love your recipes!

Amazing idea ! Except i tried these for valentines day and i used a 80 proof vodka and couldnt get it to light or stay lit. I suggest a 100 proof atleast !

They were great. I made them tonight and they were very good. I didn't get 20 but I made them large with big rounded tops. But still great, the buttercream like frosting fit perfect.

ReplyDeletePerusing the list of oohs and ahhs and too cool, I didn't see anyone ask if a toothpick would secure the strawberry to the cupcake better than just plain frosting? I know it is a hole but not one that would cause a leak. I am looking at the POSSIBILITY of one rolling off and then the guests are in for one hot table cloth...hee hee hee....Just wondering..

ReplyDeleteTo be honest, I didn't manage to light more than 3 strawberries at a time, but if you get them to burn, they stay on fire for quite some time.
I used 80-proof / 40%vol Vodka (directly imported from Russia!) which I heated up to 60 Celsius.
If you put it in a vacuum bottle, it'll stay hot till the sunset. I used a syringe from the pharmacy to fill the strawberries as quickly as possible.

btw: avoid spilling a bowl of burning vodka over your Tshirt! I'm officially known as the "burning man who survived" now.
and: everybody telling "80 proof won't burn": we had a bottle of chilled absolut vodka this evening and I managed to ignite a whole glass of it after holding a lighter next to it for ~20sec.

ReplyDeleteLOVE IT!! I'm doing this for my bf's birthday on Tuesday! He loves fire, and dark chocolate, so I'm switching out the regular unsweetened with dark chocolate just to see what it tastes like, and so far, the test batch is AWESOME! Try it! :)
ReplyDeleteAlso, one anon said the frosting was a disaster... I was skeptical at first as well, but after continuing mixing, it made a nice doughish texture that molded well into frosting for the piping bag :)
ReplyDeleteIt takes just 15 to 20 mins. to bake, so kids will not need to wait too long, nor you for that matter!
