Happy Birthday Sprinkle Bakes, and a Present for YOU!


One year seems to have flown by, and in another sense it feels as if I've been blogging about sweet confections for... well, forever!  One might say that it's easy to savor life when you measure your year in desserts.

I knew that the Sprinkle Bakes birthday cake could be no less than sprinkle encrusted.  It's even sprinkled on the inside!  For several years I've requested a Funfetti cake for my birthday, but now I've worked out a recipe for a scratch made version.  It is made with buttermilk, so it's extra moist and not overly sweet - but you couldn't tell from looking at it.  It's a visual sugar rush!

What would a birthday party be without gifts?  One lucky reader will receive a beautiful LeCreuset cast iron casserole.  Because I heart you.

To keep the mood festive, I've made birthday hats for the guests.  They do not love this idea.


Have you seen these enormous gummy bears yet?  I laughed when I first saw them and said "Who on earth would buy that?!"...ahem.

And then I walked out of the store with one.  But hey, it makes a pretty cute cake topper!

Sprinkles inside and out!

Sprinkle Bakes' Sprinkle Cake         [click for printable recipe]
Serves 12-15

Sprinkle Cake:

2 1/4 cups all-purpose flour
1 1/2 cups sugar
1/2 cup butter, softened
1 1/4 cups buttermilk
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon vanilla
3 eggs
3/4 cup rainbow sprinkles (I like the Marble Mix'ins variety found in the ice cream section)
Preheat oven to 350 degrees.

Grease the bottom and sides of two 9" (or three 8") pans and line with parchment paper.  Grease parchment and set aside.

In an electric mixer fitted with the paddle attachment, beat all ingredients together except rainbow sprinkles.  Beat on high speed for 3 minutes, scraping down the bowl occasionally.   When thoroughly mixed, gently fold in rainbow sprinkles.  Stir only briefly, because the colors will begin to run quickly.

Pour batter evenly into pans. Bake for 30-35 minutes, or until a toothpick comes out clean.  Let cool on wire racks.


Italian Buttercream Frosting:

2 cups sugar
2/3 cup water
4 large egg whites
6 sticks of softened butter (yes, 6 sticks!)
1 teaspoon vanilla

In a small saucepan over medium heat, dissolve the sugar in the water.  Stirring constantly, bring mixture to a boil and cook until 240 degrees is reached on a candy thermometer.

In the bowl of a stand mixer with the whisk attachment, beat the egg whites until they are foamy.  While mixer is running, add the hot sugar syrup to the egg whites in a thin stream.  Temper the mixture slowly and carefully.

Switch whisk attachment for the paddle attachment, and add the softened butter, 1 tablespoon at a time.   Frost cooled cakes with buttercream.

Assembly:

A variety of nonpareils, sprinkles, quins, sugar confetti and anything else you want to throw at this cake.  Sprinkle to your heart's content!

My favorite cake was one that I shared with my uncle. See we share the same birthday, and he lives a few states away. One summer when I was young, I flew out there during the summer and we shared a cake. I guess that's why I like a white layer cake with a bit of cinnamon in it. It's about the memory. :) P.S. Didn't know giant gummy bears existed...how did I miss that?

How fun! My favorite birthday cake wasn't mine, but my father's 45th birthday cake. My mother's coworker decorates cakes on the side and designed an awesome Red Sox cake for my dad with cake-man at bat and a giant baseball in the middle of the field. Not to mention, the vanilla buttercream was out of this world.

I like to make my own birthday cake - a great gift of uninterrupted time to bake something that I love. I'm still searching for my perfect birthday cake, though. I think something lemony and light for next year. As for birthday cakes that I've had - I like vanilla cake with excellent buttercream icing and some sort of fruit filling. Mmmm.....

I don't know if this counts but when I was little my grandma would always make my sister and I heart shaped cakes out of Duncan Hines yellow cake mix. We didn't have a lot of money growing up and baking wasn't really my grandmas forte. Occasionally I'll make the same boxed cake mix and think of my granny. To me, nothing will beat the taste that warms the heart :)

My Best Friend (since childhood) baked me a Lemon Raspberry cake for my Birthday about four years ago before I moved out of state. I think the ones baked with love and from someone special are the most delicious.

my favourite birthday cake since i was about 10 has been a simple lemon poppyseed cake with a lemon glaze. my mum makes one every year for me, no matter where i am. when i was at university across the country she would bake one and mail it to me so that i wouldn't miss out. yum!

Kat W. - My favorite birthday cake was actually one I made for my boyfriend at the time. I was a round cake decorated with a brontosaurus in a field of flowers with pterodactyls fling around. Maybe not the most masculine cake with the flowers but I loved it and loved how much he loved it. And, of COURSE, it was a funfetti cake! :)

My favorite birthday cake inspired me to be a professional baker. It was made by my aunt (because my mom was a TERRIBLE baker) and it was one of those doll-shaped cake that looked like Holly Hobby--all filled in with icing stars to look like her dress....heavenly. I have no idea what the flavor was. It didn't even matter.

My Favorite birthday cake is the one my mother makes for me every year. It's not a traditional cheese cake, its a chocolate mousse with a graham bottom. My father and brother dont fancy it so my mom would make them their own devil's food chocolate cake. My mom is the best mom in the whole world. Everyone wins!!!! I love you mom!

My favorite cake by far was once my mother made for me as a girl :)
It's a simple sponge cake with sweetened whipped cream and strawberries. So light, I could eat the whole thing!!!

My favorite Birthday Cake is a white cake. When I was younger, our local bakery would make additional batter when making a wedding cake and use that for my birthday cake. Hope someone ordered my white cake, since tomorrow is my birthday.

My Mom was never one to overly decorate any cakes or cupcakes (that's where I came in), but one year for my birthday, she made me little mouse cupcakes. They were complete with black licorice whiskers and little pink gummy noses. I felt so special that she had done that for me! I think it also kick started the creative wheel in my head! There is something very special about these types of memories and sharing them with others! What a great birthday :)

My favorite birthday cake was a pink heart shaped cake my mom made with red sprinkles... Appropriate for my Valentine Birthday... I purchased a heart shape pan the first time I saw one as an adult out of nostalgia. Now I bake heart shape cakes for my daughters. :-)

My mom is an awesome baker, and she's made so many great birthday cakes it's hard for me to choose one! When I was maybe eight, she made a sheet cake but decorated it with a model of our patio and put little sugar figures of me and my friends in the pool.. That one was so cool. She also made me a red velvet cake this year, which is probably my favorite because I seriously love red velvet. :)

My favorite birthday cake was actually store bought...but ONLY because it was my Golden birthday, I made a HUGE deal out of it, and my dear hubby went to the store to request the most golden cake they could give him. They frosted a vanilla cake in an OBNOXIOUS deep yellow color with bright green flowers. The cake tasted horrible, but the love and thoughtfulness behind it was wonderful! I also just had to laugh at how hideous it was :) :)

My favorite birthday cake is the last one I made- cold oven pound cake in a sheet pan with "that's the best frosting I ever had" from Tasty Kitchen. It was so good I grieved when it was gone.

My favorite birthday cakes are always the ones I make for friends and family. I love creating something delicious and unique to the person. You can't have a real birthday without some sort of cake and I love knowing that my friends will always have one perfect for them.

Best birthday cake was the red velvet rubber ducky cake my Mom made me when I was in my 20s. I love rubber ducks, but the cake was too tall to fit in the cake taker, so, at my sister's suggestion, she cut off the head, piped blue "X"s over the eyes, and set it aside the body. If you remember Meanie Babies, there was one called "Donnie Didn't Duck". That became the inspiration for the cake, and it has been my favorite ever since!

Every year for as long as I can remember we had a Carvel brand ice cream cake for my birthday and for all teh birthdays in my family for that matter. So, while it may not taste teh best it certainly brings back that childhood birthday feeling

but i made this tasty chocolate layer cake from scharffenberger's recipes for my brother in law's birthday last month. it went over very well!

My favorite birthday cake memory was when I was young my Mom made a Strawberry Shortcake themed cake and piped it completely in frosting stars, now that I decorate cakes myself I realize how much work she really put into it-makes it extra special now.

As an adult my absolute fav is Red Velvet with Cream Cheese frosting!

My favorite birthday cake for the last few years has been strawberry shortcake. But not just angel food cake and fresh strawberries. What I like is way more amazing than that! It's a white sheet cake with a creamy cream cheese/whipped cream topping topped with a strawberry glaze w/fresh strawberries. It's pretty much the best thing ever and oh so worthy of being a birthday cake!

My favorite birthday cake was the super-chocolate chocolate cake I got for my 13th birthday. It had 4 layers of chocolate cake, which were separated by chocolate ganache. The cake was absolutely covered in chocolate frosting, and it was topped with chocolate shavings! it was sooo rich and delicious.

My favorite birthday cake was when I was a kid, Sesame Street...chocolate, caramel, then doused with colorful icing, and big bird elmo oscar and the rest of the gang. it's one of those times that I was so excited to know that the cake was made just for me. Happy birthday! Funfetti cake is the only box mix cake I actually like. Homemade I'm sure is 100 times better.

I don't remember a standout cake. To be honest I don't remember any of the cakes I might have had for my birthday. I do remember my Dad sending me Carvel's ice cream cakes.

My favorite birthday cake is Chocolate Mayonaise cake with fudge frosting. My mom used to make this for all our birthdays. We didn't eat a lot of sweets, so the cake was a special treat.

My Favorite birthday cake was heart shaped. My birthday is Feb. 12 so my mom always made me a heart shaped cake for my birthday. She did that for 21 years, then gave the pan to my husband when we got married, he makes me a heart shaped cake every year. It's been 30 wonderful years.

My favorite birthday cake was a cake that I made from my Hersheys Chocolate Cookbook... (not sure of the exact name as it's packed up in a box, in anticipation of closing on my new house, once the bank gets on the ball) it was an Angle Food Cake, where I cut out the middle and put in it homemade chocolate Mousse, frosted with pink frosting made with some whip cream and chocolate shavings. Nummy nummy!

One of my favorite cakes was for my 5th birthday. It was a cowboy and indian theme, and my mom let me help put all sort of little figurines on it.

Beautiful cake by the way. My favorite from when I was a kid was a Napoleon cake from a local bakery. It was essentially a giant Napoleon pastry with frosting on top. So yummy! My favorite as an adult was a strawberry cupcake with strawberry buttercream frosting from a cupcake bakery in Berkeley, CA that my best friend bought for me a few years ago.

This is an adorable idea. I have loved rainbow sprinkles since I was a little girl. Now my grandson shares my taste. We always go to the ice cream store and we both ask for "lots of sprinkles". My favorite birthday cake would be one I actually receive and can eat! Can you believe I've NEVER, EVER had one that I can remember? My parents were divorced when I was quite young and my mother never worried too much about birthdays etc. Sad! I always make sure MY children had birthday cakes and we celebrate every birthday even now that they are all older and out on their own!

The only birthday cake I ever recieved was when my brother came home from the Vietnam war and it was my 8th birthday,my dad was drunk and my mama had to work.(my family was totally disfuctional,we wrote the book)!My brother went to the A&P grocery store and bought me a cake,it was the prettiest thing I had ever seen!It had green icing and yellow flowers,I will never forget that cake or what my brother did for me on my 8th birthday.He was the only one that remembered.Thank You,Doug.

I'm going to have to say my favorite birthday cake was for my 14th birthday a million years ago... my mom was trying to be all "hip" and ordered a photo cake, which were still pretty new at the time. I love stawberry shortcake. I always used to request that for a birthday cake, since my birthday is in May, when strawberries are available. In a close tie, would be carrot cake, which is my ultimate favorite, although perhaps not for a birthday cake.

My favorite birthday cake were these Dinosaur Cupcakes in Kindergarden. I have no idea why but I was obsessed how these cakes tasted particularly the dinosaur sprinkles which makes no sense bc most sprinkles taste the same. Either way I will never forget that tastilicious memory. Happy Bday and ps

My favorite birthday cake...hmm it would definitely be my 27th birthday cake. I asked for something awesome from my mom and she totally went all out and made it with marshmallow fondant. It was her first time making anything with fondant, she did a fabulous job and put her all into it! I loved it!

My favorite birthday cake would probably be one that we had for my grandmother's 65th birthday party (and because we share a birthday, mine as well). It was a delicious yellow cake with the prettiest pile of butter cream flowers I have ever seen in purples and pinks. I will never forget that cake, I think.

My favorite birthday cake was my grandmother's cheesecake. When I lived nearby she would make a small cheesecake every year for my birthday. I had to stop myself from eating it all in one sitting! It was made with lemon Jello and something called DreamWhip- it's unlike any cheesecake I've had anywhere else. It was cool and creamy; just perfect for my June birthday. Even now I drool just thinking about it!

I remember one of my favorite birthday cakes was when I was around 9 or 10; it was a round milk chocolate frosted cake and on the top was a circle of cutout paper dolls that went all the way around the edge of the cake! :)

I can't remember a specific year's cake to name my favorite, but every year I asked my mom for an angel food cake with strawberries. And every year she would oblige. Thanks, Mom! I think, if I had to name a favorite, I cannot NOT mention the fun I had making my son's first birthday cake - a Disney Cars themed two-tiered fondant covered labor of love! :)

My favorite birthday cake was the one I got to decorate myself when I was 4 at leaps and bounds, a kiddie wonderland of tubes and ball pits. They gave me an entire shaker full of sprinkles to "decorate." Let's just say there weren't many left when I gave it back to them...

My favourite birthday cake is the one my mom makes for me every year, still to this day. How to make a simple white chiffon cake with strawberry jam filling more delectible....frost it with whipping cream and sprinkle with peanut brittle. YUMMM!

I always had the best birthday cakes growing up. My Mom had this huge collection of ideas she would cut out of women's magazines during the 80s. My absolute favorites were cakes that used Teddy Grahams dressed up somehow depending on their scenery. She made a cake to look like a pool with blue icing, the T.G.s had bathing suits frosted on, and there was a ton of yummy edible pool scenery around. I actually think it was on a cover of Women's Day Magazine back in the early 80s. Anyone remember that one? I am 25 now, but I actually had her re-make it for me for my 21st birthday, haha. It was fantastic as the first time!

I always ALWAYS request red velvet with cream cheese frosting. The red velvet really just serves as a vessel for the frosting. We always got to decorate our own cake with sprinkles and colored frosting.

Growing up I never had the privalage of home made birthday cakes, it was alway yucky storebought ones. I do remember one in particular it was decorated with Strawberry Shortcake and friends (the old 80's carton). I was the usual fruit cake center with white cake. Its one of the cakes I remember the most.

My favourite birthday cake involved 6 layers of chocolate meringue made by my darling mother. She left the cake in the fridge on my birthday, and it was so intricate and fancy that I didn't realize that it was for me! I thought that it was for one of her "grown up" dinner parties, and made my own Betty Crocker cake from a box. When she got home from work and told me that the fancy cake was mine, I was so excited!

While I am always happy to oblige since this is easy to whip up with a mix and canned frosting, I always wish that it could be (in MY opinion) a bit more special a.k.a. home made. My Mom made a strawberry cake with lavendar buttercream but the best part, the My Little Pony she hand piped onto it, the Skittles rainbow with pink cotton candy clouds, along with my birthday message that my Mom put on all of the cakes she has made me... "Hippo Birdies two Ewes!" (One year she even just drew the animals on the cake instead of write it, probably my second favorite!)

I made someone a pacman cake a few years back. It was my brother-in-law he was only 5 at the time. My favorite cake for my birthday is any thing with chocolate and coconut together. It has been that way for the last 40 years.Thank you for this give away.

My mom once made me the most amazing orange cloud cake with fluffy orange frosting. My birthday is in the dead of winter, so the sunny citrus was so wonderful and bright. I haven't been able to find the recipe since then.

My favorite birthday cake will always be the one my grandmother used to make for me - yellow sheet cake with a cooked chocolate fudge frosting that you pour on just like fudge and you can peel it off when it cools! Simple, but wonderful. That said, my favorite cake that I made for my daughter's birthday was the Lisa Frank inspired 3-D cat that I made from a Wilton Easter lamb pan. It had pink and purple "fur" frosting, and really looked like her one of characters. Sadly, the cake "committed suicide" while we were preparing to go to the party (it wasn't balanced properly I guess, and toppled over the edge of the counter and on to the floor...) so I had to hurredly make something else, but it's that cat that my daughter and I remember best!

my 16th birthday cake... homemade by mom. it was a chocolate cake frosted with vanilla buttercream and chocolate buttercream poured in the center that cascaded down the sides. I ate the entire cake in 24hrs... no joke. 24hrs. this is a really dope blog. i stumbled on it a couple of days ago while looking for Blue Velvet Cupcakes... bout to get started on 'em!

My all-time favorite birthday cake was a strawberry shortcake delight. Angel food cake topped drizzled and soaked with strawberry jello, all topped with fresh strawberries and frosted with whipped cream. Delicious!!

My favorite cake was the Cookies N' Cream birthday cake my friend made from scratch. It was way better than any in store or bag cake I've ever had, especially with the use of the fresh cream. I also kind of like the cookies only on the frosting part and the cake being left simple and plain.

I love the gummy bear topping...how fun! It must take days to eat something like that.

That cake looks delicious. Everything you make is so visually stunning, and I think your cookbook will be a hit. As a kid, I was obsessed with the airy frosting on store-bought cakes, but my mom felt buying a cake was so impersonal. So, she made similar airy frosting and colored it all these funky colors. It was fun. Although, I think that cake may have been beat by the Chocolate Sour Cream cake she surprised me with on my birthday back in August.

I always wanted one of those cakes with a Barbie doll in it, where the dress is cake, and I finally got it...when I turned 35. My sister is the best!

First of all the cake is adorable and both my kids have now asked me to abandon cupcakes and make it! My birthday is Halloween so I often got a pumpkin pie, but every now and again I'd get a butter cake with chocolate frosting in the shape of a pumpkin with candy corn decorations. Still makes me smile.

I always ask for funfetti cakes. I love them to pieces (I'm almost 30, fyi)

This year, the boxed funfetti cake fell apart when she tried to turn it out of the pan. She didn't grease it well enough. So she was forced to run out and get a backup ice cream cake. But those have gotten very expensive in recent years. So instead of the traditional birthday cake, I had a DQ Ice Cream log, which mom decorated with purple sprinkles. It was kind of odd, but tasted good anyway. :)

I was wondering what kind of sprinkles you can put IN the cake. Do you have to use Jimmies? because I have two big bottles of Nonpareils in my cupboard and I was wondering if I used those in my cake, will it effect the texture of the cake?

Preheat oven to 375 ° F with rack in the middle. Grease a 9 inch square cake.

Mix together the flour, baking soda and salt.

Beat together softened butter (1 stick) and 3 / 4 cup sugar in medium bowl with electric mixer at medium speed until pale and fluffy, then add the eggs 1 at a time until well blended. Add bananas, yogurt and vanilla (mixture will look curdled).

I'm curious, how did you sprinkle the sides of the cake? this might be a silly question. I guess rolling the cake in sprinkles is out of the question, do you just shake the sprinkles onto the side and they stick? Also, can you recommend a different frosting as I don't have a candy thermometer, maybe something simpler? Thank you!

Hi Heather, maybe a silly question, but how do you put sprinkles on the sides of a cake? Do you throw them on, roll the cake, cover wax paper w/sprinkles and press it to the sides? If I use my palm- it always looks sloppy. Any tips? (btw- love your book- going to attempt the bombe cake for father's day :) )
